I’m not sure you can, as you pointed out already, call it character development. The stuff we saw was always there. The stuff I saw honestly didn’t surprise me, but then again, maybe it has to do with the fact some people are able to pick up on that kind of thing than others, so for some part of fandom it may very well come across as character development.
But to much? How can you have too much character development? No, seriously, I - a writer - have never heard this one before. This isn’t something that we’re warned about existing because it doesn’t exist. It’s like saying that one had too much of a good thing, and yet character development at it’s very core is something you can’t get enough of, because it’s the natural progress. It’s like saying you’ve gotten to much air equivocally.
“Keith is acting OOC”
No, he’s not. If you’re going to make the accusation of Keith acting OoC, you’ve got to back it up with canon evidence, as well as real world logic regarding how people act, and the thing is, you can’t.
More specifically, isn’t the real reason you’re saying it is OoC for Keith because that’s the characterization you want for Lance, to be an emotional woobie, so you’re pissed at the staff because Keith got the “becoming an emotional woobie” video you wanted for Lance?
No, really. Think about it.
You guys went on and on about Lance being the seventh wheel and how his troubles are so woeful, but one of the things about said scene is he’s also pointing to how “perfect” Keith’s life is in comparison, which means Lance is blissfully unaware of how bad things are for Keith, and that Keith’s life is far from “perfect”. Lance’s biggest woe is that he doesn’t have a special skill like the others, but that leads to him worrying about not being needed because as he points out - it is better to have your best on the field.
How does that compare though to what the woes of the other characters? Allura and Coran lost their entire world. Shiro lost an arm and has PTSD. Pidge lost her family. Hunk has physical issues that hold him back, including motion sickness, but also his size can at times get in the way. Then there is Keith, who’s got an extreme identity crisis due to not knowing for sure who his family is, but has been rejected and given up on his entire life despite being a genius at what he does.
Lance’s woe is that he’s normal. He has a normal family. He has no physical handicaps. Even psychologically his woes are normal for his age range.

I think we’ve come to the answer here. Lance-stans don’t like thinking of him as “normal”. But guess what. Lance’s normalness is what makes him such a wonderful character, but is what makes him important to the team. If you can’t get that, then it’s time to get out of the fandom, as you don’t get the fandom at all.
Headcanon’s are fine, but there’s a time you’ve got to admit that you’re a fan of your personal headcanons, not the actual canon material. There is a major difference between preferring your headcanon over canon and treating your headcanon as canon over canon. You can’t go through fandom with the latter attitude, as it means you’re not actually thinking outside of the box.
